Fruit compote is quick an easy to make so it a great way to use up fruit or to make a quick desert or breakfast treat. When you are using fresh redcurrants and blackcurrants to make a fruit compote for a cheesecake topping, try using the type of sugar that is used for jam making. Preserving sugar has pectin in it to help with the setting of the jam.
