Motherhood has brought me a lot of things, joy, laughter, sorrow and pain. Pain because I've had to watch movies over and over and over again. Once you have your pan layered, drizzle the tops with olive oil and sprinkle with a generous amount of thyme. And then salt & pepper to taste. Cover with dish with a trimmed to fit piece of parchment paper and you're ready to cook. It goes in the oven for 45 minutes. Refrigerate until the dish comes out of the oven.

Once the timer dings pull the dish from the oven, and serve up. Just remember to spoon it out backwards to how you layered it so it continues to look nice on your plate. Add a dollop of the marscapone knock off to the top of this dish for a little piece of heaven. This is very good as a stand alone, but can be served over a starch, like pasta, crusty French bread, or brown rice. Next round I'm serving with andouille sausage on the side. The flavors would compliment very nicely. You're ready to eat!
